Butternut Squash, Chilli and Coconut Soup

Ingredients
  

  • 1 tbsp Olive Oil
  • 1 Butternut Squash chopped into small cubes
  • 1 Red Onion finely chopped
  • 2 Garlic Cloves finely chopped
  • 1 tsp Chilli Flakes
  • 3 cm Ginger grated
  • 400 ml Coconut Milk
  • Juice of half a lime
  • 2 tbsp Coriander (Cilantro) leaves
  • Salt and Pepper to taste
  • Pumpkin seeds and sliced red chilli for garnish (optional)

Instructions

  • Put the olive oil in a large saucepan and add the cubed butternut squash. Fry gently for 2–3 minutes.
  • Add the diced onion, cover with the lid, and cook on a gentle heat for 5 minutes, stirring occasionally, until the onion is softened but not browned.
  • Stir in the garlic, chilli flakes, and ginger, and fry on a low heat for 2 minutes.
  • Pour in the coconut milk, bring to the boil, then reduce the heat and simmer for 15–20 minutes, until the squash is tender.
  • Turn off the heat, add the juice of half a lime and then blitz the soup with a blender until smooth.
  • Serve warm with coriander leaves, pumpkin seeds, and slices of fresh red chilli.
