Simple Protein Pancakes

There is nothing complicated about these pancakes. They are a quick, wholesome stack you can pull together on busy mornings using just a few simple ingredients. Ingredients
  

  • 100 g Plain Flour (or GF alternative)
  • 30 g Protein Powder
  • 1 tsp Light Brown Sugar
  • 1 tsp Baking Powder
  • 2 Eggs
  • 60 ml Milk (or dairy free alternative)
  • 1 tsp Vanilla Extract
  • 1 tbsp Coconut Oil

Toppings

  • 60 g Yogurt
  • 40 g Berries
  • 20 g Peanut Butter

Instructions

  • Add the flour, protein powder, baking powder, sugar, milk, eggs and vanilla essence to a bowl.
  • Mix everything together until the batter is smooth with no lumps.
  • Heat a non stick pan over medium heat and add a little coconut oil to the pan and let it melt.
  • Spoon the batter into the pan, dividing it into four equal pancakes.
  • Cook until bubbles appear on the surface and the edges start to set, then flip each pancake.
  • Cook the other side until golden and fully cooked through.
  • Stack the pancakes on a plate.
  • Add yogurt, blueberries and drizzle over the peanut butter.
